After a dry, cold winter, spring of 2011 was unusually warm. This weather encouraged plant growth and fruit setting in conditions of perfect health. Significant effort has been made in the vineyards all the year through. The wines have complex aromas of citrus with a chalky minerality. Grape ripeness was achieved without any excess of weight or overripe aromas. Finish on the palate is long and pungent, with a touch of minerality.

Yields: 50 hectoliters/hectare (3.7 tons/acre)
Pressing: Supervised in our winery, whole bunches in a pneumatic press, followed by 12 hours settling at 12Ã‚Â° to 15Ã‚Â°C (53Ã‚Â° to 59Ã‚Â°F)
Fermentation: 15 days at 16Ã‚Â°C (60Ã‚Â°F) in stainless-steel tanks
Aging: 2 months on fine lees in stainless-steel tanks; no barrel aging
Filtration: Minimum filtration to preserve the maximum natural character of the wine
Bottled: Under low pressure on a bottling line designed to protect the wine’s quality
Appearance: Bright straw color
